Simple Queso Blanco

  • 1 lb. white American cheese, grated
  • 3 Tbsp. milk
  • 1 Tbsp. butter
  • 8 oz. cream cheese
  • 1 -4 oz. cans green chiles chopped
  • 2 Tbsp. cilantro
  • 1/4-1/2 Tbsp. jalapenos chopped
  • 1 tsp. cumin
  • 1 tsp. chili powder
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  1. Put cheese, butter, cream cheese, and milk into a stockpot and melt together on medium heat, stirring often

  2. Continue heating and stirring until everything is well combined and smooth

  3. When this is accomplished, add green chiles, jalapenos, cilantro, and other spices and mix until well incorporated

  4. Transfer to a crockpot to keep warm or serve immediately

  5. Serve with corn chips, warm flour tortillas, or fresh vegetables

Recipe Notes
  • For more convenience, this recipe can be done completely in the crockpot as long as it is stirred very frequently early on while the cheese is melting and incorporating.
  • You can "up the heat" by adding Rotel tomatoes and/or cayenne pepper.
  • You can reduce the heat by removing one or both cans of green chiles.
